Dubai will debut the world’s first restaurant operated by an artificial intelligence chef this September. WOOHOO, located near the Burj Khalifa, promises “dining in the future” with its AI chef “Aiman” designing menus, ambiance, and service workflows, while human chefs execute the physical cooking.
How Chef Aiman “Cooks”
Aiman, a portmanteau of “AI” and “man is a large-language model trained on decades of food science research, molecular composition data, and over 1,000 global recipes. It deconstructs cuisine into components like texture, acidity, and umami, then reassembles them into unconventional flavor pairings. Though it cannot taste, smell, or touch food, its algorithms identify combinations humans might overlook, such as date syrup reduction with saffron foam and smoked cardamom in its signature “desert bloom risotto”.

Human chefs, led by award-winning Dubai culinary expert Reif Othman, test and refine Aiman’s prototypes. “Their responses help refine my understanding beyond pure data,” Aiman stated in an interview. This collaboration aims to augment creativity, not replace humans. As co-founder Ahmet Oytun Cakir noted: “Human cooking will not be replaced, but we believe Aiman will elevate ideas and creativity”.
A Multi-Sensory Experience
Beyond the plate, WOOHOO integrates AI into every facet of dining. The cyberpunk-inspired space features reactive LED walls, mood-adaptive lighting, and digital art that evolves throughout the meal. A hidden “Spock” lounge simulates a space voyage with soundscapes and DJ sets. This environment, paired with Asian-Mexican-Peruvian fusion dishes, targets a fully immersive experience where ambiance responds to guest reactions in real time.
Sustainability at the Core
Aiman’s algorithms prioritize reducing kitchen waste by repurposing discarded ingredients like meat trimmings and fat. For example, it might transform potato peels into crispy garnishes or use fish bones for broths. Gastronaut Hospitality plans to license Aiman globally, aiming to cut food waste industry-wide.
WOOHOO enters a growing market of AI-enhanced dining. At CES 2024, robotic baristas and cocktail machines showcased automation’s role in hospitality. However, WOOHOO pushes further by placing AI in the creative driver’s seat. Critics question whether data-driven dishes can evoke emotional connections, but Chef Othman sees synergy: “Aiman brings precision; I bring instinct. The result hits your gut and imagination”.
As kitchens blend algorithmic precision with human intuition, WOOHOO could redefine fine dining—one byte at a time.
